Nancy, a native of Valdosta, Georgia,  is a consultant specializing in sensory training, product development, flavor chemistry, and quality assurance projects.  Nancy has over twenty years of experience as a food scientist and food chemist with one of the leading food companies in the world, The Minute Maid Company (TMMC) which is a Division of The Coca-Cola Company. While with TMMC Nancy was directly involved with the development and inception of many of the company’s leading products, which are currently yielding in excess of $76,000,000 in profits per year. Those products include the following: Minute Maid Orange Passion, Orange Cranberry, Fruit Punch, Cranberry Apple, Cranberry Apple Raspberry, Lemonade Iced Tea, Hi-C Berry Punch, Hi-C Berry Blast, Bacardi Strawberry Daiquiri and many more.   She also completed improvement and reformulation projects that have resulted in cost savings in excess of $18,000,000 per year.   Nancy has combined her knowledge and expertise in food science with her superior organizational and problem resolution skills to develop and coordinate projects in all areas of the food industry such as sensory panel training and development, consumer testing, product development, cost savings evaluations, beverage processing, manufacturing, quality management system development, GMP, Food Hygiene, HACCP, ISO 9000, and other related systems.

After early retirement from The Minute Maid Company, Nancy has been consulting in the food industry with many major food companies.  In her laboratory, she has developed products for  Kroger, WalMart, Albertson’s, Darden Restaurants, Road House Grill Restaurants, as well as for other companies.  She also does sensory training and trouble shooting for many of the major flavor and food companies in the industry such as Givaudan, Dragoco and Louis Dreyfus.

She now owns and operates two corporations, M & M Consulting & Laboratory, Inc. and Tropical Paradise Beverages, Inc.

Nancy received her Bachelor of Science Degree from the University of Central Florida graduating with honors.  She is a member of the Phi Theta Kappa, Phi Kappa Phi, and Delta Tau Kappa Honor Societies.

In addition to those already identified, Nancy’s areas of responsibility and accomplishments while with The Minute Maid Company included the following:
  • Performed evaluation and screening techniques of individual flavors for new and improved products for cost savings potential.
  • Developed and implemented Supplier Certification Program, and served as a member of the Audit Team.
  • Evaluated and approved innovations in new package design.
  • Developed shelf stable tests for finished product evaluations.
  • Developed and implemented a Quality Assurance Program for monitoring all flavors and oils used in TMMC products.
  • Evaluation and approval of flavors for use in TMMC products.
  • Established and implemented preventative maintenance procedures focused on maintaining continued process capability.
  • Innovative product development to assure plant scale-up of final production process and manufacture.
  • Performed root cause evaluations and follow-up analysis of customer and consumer complaints.
  • Actively performed as a trained sensory expert as a member of the highly trained specialized Sensory Descriptive Analysis Panel, with expertise in all types of citrus and apple essence as well as other flavors.   She now does Sensory Training for other companies in the food industry.

Nancy is currently an active, Professional Member of the Institute of Food Technologists, American Chemical Society, and The Florida Restaurant Association.   She has served as Chairperson and Secretary of the Florida Section IFT.   In 2004, she received the Bob Olsen Award for her service to the Florida Section IFT.   She has also been invited to be a representative for National IFT to China in November, 2004, because of her service to the food industry and her work accomplishments and contributions to IFT.
